It’s National Spaghetti Day!! Who doesn’t love this pasta? Spaghetti originated in Sicily during the 12th century and today, there are over 300 types of pasta! To commemorate this day, and the joy spaghetti bring to our lives, let’s get making some of our favourite food.

Have you made pasta from scratch? Why don’t you give this a go and see how it turns out? With fours simple ingredients, you’ll be able to create a jaw dropping dinner. Alternatively, just get some dried spaghetti and raise a glass to this delightful noodle.

To make pasta from scratch, you’ll need:

2 cups of all purpose flour (00 flour is also amazing)

3 large eggs

½ teaspoon of salt

1 tablespoon olive oil

As with every recipe, be sure to adjust the ingredients as required. Sometimes, you’ll need a little more flour or a touch more oil to achieve the right consistency.

Working on a clean surface, make a well in the middle of your flour and add the rest of the ingredients. With a fork, work in the eggs around the flour trying to keep the flour walls intact. Ditch the fork and use your hands to incorporate the remainder of the flour and need the dough. Kneed for about 10 minutes so that the dough becomes smooth and cohesive. Wrap in plastic and let rest for an hour. Cut the dough into pieces, flatten each one and run through your pasta machine several times until you get to level 7 for a thin enough consistency to then have a final run through the spaghetti attachment (if you choose). Cook for just a few minutes in boiling water and serve immediately.

Simple Tomato Sauce

2 onions chopped

1 head of garlic chopped

12 roma tomatoes

8 sundried tomatoes

bay leaf

oragano

Salt and pepper

This is a very simple and delicious recipe! Wash and cut your tomatoes in half, sprinkle them with salt and pepper and olive oil and broil for about 20-30 minutes (this is to cook them slightly and dehydrate them to intensify their flavour). Saute the onions until caramelized, add the garlic, broiled tomatoes (take off their skin), chop the sundried tomatoes, bay leaf, oregano, salt and pepper as well as a little bit of water. Simmer for an hour and serve on top of your favourite pasta!
